Chicken Berry Salad

I saw something similar to this on Pinterest, pinned it, and kept on going. But I couldn’t stop thinking about the salad. It was beautiful. It had a lot of my favorite things and, it looked so summery.

Today, in the middle of a very mild snowstorm, I decided that we needed a dose of summer. Instead of looking up the salad and making it step by step (who has time for that?) I decided to use what I had. (and what we like)

It’s really easy, and turned out beautifully

This is what you’ll need (Serves 2);

1 lb chicken tenderloins, baked through with 1 lemon squeezed on top (20 minutes at 350 F)

1 cup blueberries

2 cups mixed salad of your choice (I used an herby blend)

1 cup sliced strawberries

1/2 avocado

1/4 cup sliced almonds

1/4 cup sliced gruyere cheese

That’s it! We dressed it with one of our favorite’s Drew’s Lemon Goddess Dressing. If you’re feeling creative, make your own dressing. If you’re feeling a little lazy (and we were- a nice bottle dressing will do).

Oh and a bonus, B ate strawberries! Yay! We may be moving away from puree! Z on the other hand, had no interest in this salad. Bummer.
