I want to say this week went by quickly, but it didn’t. While we had a lot of activities planned, the days weren’t planned out all that well which led to a lot of “what should we do today?”. I’m notoriously bad at being on a schedule, but am learning (albeit slowly) that Z really thrives on a schedule. So. That’s probably what I’ll be up to today. Making a schedule. Bleh.
On another note, last week’s menu planning for all practical purposes worked. I had one extra meal as I didn’t account for leftovers. While I will not leave room for leftovers again (as we typically eat these for lunch and I would rather bolster my pantry than be scratching my head for a meal at 5 pm) it was nice to not have to think all that hard about what I would be making when I had someone telling me they were ready for dinner at 4 pm.

Tuesday – Daal with homemade Roti
Wednesday – Chicken Berry Salad
Thursday – Stuffed Shells with Salad

Saturday – Black Bean Empanadas, Rice and Salad
