I love drinks with fresh fruit and/or herbs in them. Alcoholic to non-alcoholic I haven’t met a fruit/herb based drink I haven’t liked.
Seeing that it’s peach season, I decided after a long day of kid antics I would make a beautiful, fresh peach Bellini. I wanted to put my own spin on it so I incorporated Amaretto and fresh basil.
This is what you need; (Makes 4 glasses)
1 fresh peach, peeled
1 tbsp Amaretto liqueur
1 tbsp fresh basil, chopped
Quickly macerate your peach with the amaretto. Smoosh down the peach mixture until it becomes a pulp. Add your basil and muddle to incorporate.
Add your peach mixture to the bottom of a champagne flute and top with Prosecco. Garnish with a fresh peach slice.
