Banana Chocolate Chip Donuts

So it’s snowing here again in fabulous MA which is starting to tip the scale on anyone that doesn’t regularly have seasonal depression. I wanted some cheering up, so I decided to make doughnut. (What is the proper spelling anyway? Donut? Doughnuts?) My mom had bought me a doughnut pan awhile ago but I hadn’t gotten around to using it and thought it was perfect timing.

I like the idea of baking doughnuts, primarily because I hate frying things. Not for health purposes, more because I just find that I always, absolutely always burn myself and stain my clothes when frying. Even with a splatter screen. I’m just talented like that. Plus I’m not 100% confident having Z helping me when using copious amounts of oil. So with baking, she can do most of the grunt work (fabulous!).

I found a recipe on Pinterest for these muffins, and was just going to follow the recipe and review it here. But the link was dead (boo Pinterest) so I did some further investigation and found a recipe on the food network that I could alter to my liking.


These are a simple breakfast or snack, highly portable (my breakfast theme) and use things that I had in my kitchen (I’m one of those people that freezes her bananas when they turn brown). You really can make them with any ingredients to suit you and/or your families’ likes, but I would add some banana to the mixture to keep the consistency in check.

This is what you need;

1 1/2 cups all purpose flour

1 tea baking powder

1/2 tea baking soda

1 tea cinnamon

1/2 tea salt

3 medium mashed bananas

1/2 cup sour cream

1/2 cup vegetable oil

1/2 cup light brown sugar (packed)

2 large eggs

1 tea vanilla extract

1/2 cup chocolate chips

1/4 granulated sugar

Preheat your oven to 425 F.

Mix flour, baking powder, baking soda, cinnamon and salt in a large bowl. Set aside.

In a medium bowl, mash up your bananas. Add sour cream, vegetable oil, brown sugar, eggs and vanilla extract. Mix well.

Add your wet ingredients to your dry ingredients and stir to incorporate completely. Add in chocolate chips and fold in (I used mini one as Z like them best and they would distribute better throughout the doughnut batter).

Spray down a doughnut pan with Pam or other oil.

Spoon mixture into pan carefully until about 1/2 full.

Bake for 8-10 minutes in preheated oven. Your doughnuts should have the consistency of muffins (as that is sort of what they are when baked) and be a golden brown.

Immediately dip hot doughnuts into granulated sugar on both sides to coat. Set aside on a plate to cool and spray doughnut pan and repeat until all your mixture has been used.
