Coconut Chia seed Pudding
Every Year a New but very very old cure all comes onto the market. About ten years ago people talked about green tea all the time and the benefits of drinking it, eating it, and giving up coffee for it. Then as I recall it was Kombucha. Friends made their own in the bathtub, and it didn’t taste that bad. Then of course Quinoa, westerners bought so much of it the past 7 years there may not be any left. You can also enjoy some millet or bulgar in it’s place its cheaper.
Then a few years ago we invaded the coconut like ants on a sugar cube. The water was better than sports drinks with the potassium of a banana as read on the label. I liked it for the hangovers. We also started making coconut sugar, using the oil for everything, and eating it instead of bacon. Yup. Check out the recipe.
I was a sucker for it all. And almost all of these healthy fads are still in my diet, even though I know I was a victim of advertising and the whole paycheck.
Why do I share this all with you? Well the latest of course, the chia seed! It’s a tasteless seed that is supposed to be amazing for you and cure cancer and give you a clean liver. I made all that up, but there are facts,look them up. I first noticed the swelled up seeds in my Kombucha drink (not from the tub) because they float as if in space. When a friend from grad school commented that she used them in salads and well everything I got hooked. Pretty soon they went in smoothies, and soups, salads, and so on.
So when I came across a healthy sweet recipe I thought I should share. This stuff tastes good and if you are like me in winter where all you want is sweets then this may take the edge off so you don’t eat a million cookies.
All you need is four ingredients
1 cup almond milk
1cup coconut milk
½ cup chia seeds
3 tablespoons agave
Mix in Jar and cover overnight. About 8 hours. I topped mine with slivered almonds and cinnamon. You could add shredded coconut, chocolate chips, fruit, or a touch of vanilla.
