Not Your Average Strawberry Jam

It’s PYO Strawberry season here on the east coast of the USA.

Due to our l-o-n-g winter, it’s taken a long time for most things to grow over here. So, it’s supposed to be blueberry season, but, it’s not.

AND Kim Kardashian and Kanye West had their baby girl. YAY!!

To celebrate both of these fantastical events, I’ve created a jam that is not only sweet, but smoky and savory. I think this is what a Kardashian-West kid would be like…use your imagination.

This is what you’ll need;

1 lb fresh strawberries (1 pint) – I cut these up in slices to make the jam a little less lumpy

3 tbsp balsamic vinegar

3 tbsp water

1 tbsp cracked black pepper

1 tbsp lemon zest

1/2 fresh squeezed lemon

1/2 tea ground ginger

1 1/2 cups demeterra sugar (you can use white sugar)

Ready? Let’s go.

Get a pot, I used a large saute pan that had deep edges. Use whatever you have.

Add all the ingredients on high heat and stir until all ingredients are bubbling and the strawberries are starting to loose their natural shape.

Z mashed all the strawberries with a wooden spoon as we went. She actually told a pretty strange story about monsters invading a castle while she was doing it…not sure if it was related to the action, but it was pretty great as it is.

Keep on high heat for 10 minutes. That is 10 minutes of stirring and having a mixture that is watery and bubbly. As soon as your mixture starts to thicken, reduce heat to low and stir until you can easily scape the bottom of the pan and the mixture appears to be sticky. (You can also test this by lifting the wooden spoon you are using to stir with and seeing that the mixture doesn’t just fall off, but sticks a bit)

Now stir regularly until the mixture thickens, about 5-10 minutes. Remove from heat and jar immediately.

I then let the mixture cool on the countertop for about 30 minutes. Put in the fridge. This should keep in your fridge for about a month.

Serve with goats cheese, on crackers, with fruit, as a part of a tart, anything.

It’s a sweet/savory jam – it’s pretty freaking amazing if I do say so myself.

Woops…baby is due next month…my bad. 🙂
