Lemon Tortellini

Today is not the day I found out that my sister-in-law got engaged. Today is the day that I actually decided to put a dish together to celebrate. Sound weird? Especially since she won’t get to eat it? Probably. But I find when I think about someone, I tend to categorize them as a food, a feeling or a season. I don’t know why. I just…do. Today I was telling Zara about the engagement, what it means and comparing it to my own sister’s upcoming nuptials (I’ve always wanted to use that word). My daughter doesn’t really get the word ‘married’. I think it’s because I was describing love, and in the end I was overcomplicating the matter with my own politics. Ridiculous. How do you explain to a child that not all people who love each other can legally get married? But they still love each other and deserve to be married? I tell you, not easily. Anyway, I’m off the basic point. I was trying to explain to Z that Jason is going to be her uncle just like Jared is going to be her uncle. I think she got it.

Anyway, I always think of lemons when I think of my sister-in-law. It’s not because of their sourness, actually it’s because I think of simplicity in its purist form. That’s her.  Think of an elegant italian espresso. With a side of lemon peel. Fantastico.

So today, I made Lemon-y tortellini. This is what you’ll need;

1 package of cheese filled tortellini

1/2 lemon

2 tbsp olive oil

1/2 tea freshly ground black pepper

1 tbsp pecorino cheese

1/8 tea salt

This dish is SO easy and SO SO delicious. It’s very easy to get your child to help cook and I can almost (almost) guarantee your child will eat it.

I think prep to table is about 10 minutes. You can’t beat that…right?

Boil about 3 cups of water in a pot. When water comes to a boil, add tortellini. Cook until your tortellini floats at the top. Drain.

In a medium-sized glass bowl, add the olive oil and squeeze the lemon half. Add the tortellini, the cheese and the spices. Stir like mad. Taste. It’s so fresh (and cheesy) you’ll want to gobble up the whole bowl before you serve it! (Don’t, a whole bag of pasta is actually kind of disgusting – I’m positive I’ve done it at one point or another).

    I remember you saying that you told Zara all about the big white dress last year and how she was soo excited!! And what a good way to describe marriage to Zara! That pasta sounds yummy!! I will have to cook it for someone special !!!
