What to do with all those leftover Easter eggs??

Well there are about a bazillion things to do with Easter leftovers. I of course instantly made deviled eggs. But what about the next day? When you only have say, 10 hard boiled eggs in your fridge? I made egg salad of course! But not just ANY egg salad (why be boring right?) I made egg salad that made me think of spring, that had a crunch and I would want to serve to friends (so there would be no more egg leftovers).

This morning, for a small gathering, I made Egg salad with fresh mint, green cabbage and lemon aioli. I served it with fresh toasted thick farmer’s bread cut into soldiers. (Sliced bread)

This is what I used

6 hard boiled eggs, peeled and chopped

2 tbsp lemon aioli 

1/8 small green cabbage, chopped

1 tbsp fresh mint, chopped

1/4 tea pepper

1/8 tea salt

Mix well and serve with the beautiful bread. Alternatively, I also made it as sandwiches later in the day…
