Cucumber Mint Smoothie

Maybe it’s that it looks (but doesn’t feel) like spring. Maybe it’s the semi-health kick I’m trying to trick myself into starting, or maybe it’s the ridiculous amount of fruit and veg in my fridge (I know, boo hoo for me). Whatever it is, today I decided to attempt yet another smoothie, BUT it needed to be one for Z and me. Me for breakfast, her a supplement to her breakfast.

We both LOVE cucumbers and would eat them in every meal if it were more affordable (and went well with the meals I planned…), and I love mint. The idea with these smoothies is that they are sweetened naturally with fruit, so there is no need to add extra sugar or honey. So far it hasn’t been a problem. But today, how would I fruit sweeten a cucumber mint smoothie?

This is what you’ll need;

2 tbsp cold milk

8 cucumber spears, or two mini persian cucumbers, peeled

large handful of fresh washed mint leaves. I used spearmint

20 green grapes

1 tbsp greek yogurt

That’s it! Green grapes. Genius! (If I do say so myself…)

Pulse in a blender or food processor until smooth (and delightfully green!).

I should have made it for St. Patrick’s Day…who knew? Happy supposed spring!!
