I was going to tell you about the amazing vegetarian meal I made for dinner tonight, using some leftovers (I made rice and lentil cakes), but I forgot to take a picture, so instead, I bring you the other thing I did today, make coconut rum raisins. Yup, a slight twist on the standard rum raisin concoction. I thought about things that I love, and remembered these oatmeal rum raisin cookies my mom used to make, which prompted a memory of my parent’s cabinet that has a jar of rum raisins constantly marinating.
I thought they would make an excellent addition to the host gift thing I seem to love making and writing about. Plus who doesn’t love rum raisins? They are awesome on ice cream, spice up a drink, are great in cakes, rice pudding and trifle, not to mention oatmeal cookies. So I bring you coconut rum raisins. They are so easy, get some raisins and add your favorite rum. Leave for at least a month, the raisins will be nice and plump. Enjoy!
