Chili Revisited

If you are a good and loyal follower of this blog (and I can only assume that all of you are), then you know that last night, we had chili. Since my husband and I both had it for lunch, I wanted to slightly modify it for dinner so that we actually want to eat it for almost 3 meals in a row. So here it is…sort of modified (not really) chili.

Nachos!!!

I had half of bag of tositos, cranked the oven to 350 and mixed the beans with the chips until beans were just warmed through. I then added chopped red onion and jalapeños (which, I’m generous with…because I love them). Then back in the oven they go for 10 minutes. Take out, add cheese (I prefer extra sharp cheddar if possible). While this is cooking for its last 5 minute leg, I chopped up a half a head of iceberg lettuce, took the salsa from last night out for the fridge with the sour cream And chilula, (probably spelled wrong).

Once the nachos are nice and toasty, pile everything else on top and enjoy!
